Bottling sugar options: Try any kit with organic corn sugar for bottling. Corn sugar provides a cleaner more neutral finish with less sediment in the bottle than DME. Dry malt extract (DME) for bottling is what we include in most of our kits, which gives a creamier head, fuller body, and maltier flavor than corn sugar. If you do not need bottling sugar, order any of our kits without it for $1 less.

7 Grain Heritage Ale: This brew has been a personal favorite of Co-op Member Amelia for many years. Amber in color with a nutty complexity from the toasted buckwheat, millet, and quinoa. Wheat and oats give the ale a full bodied flavor, with barley and rye for a clean finish. The hops are mellow to allow the unique grain flavors to come through. It's not just for breakfast any more! This kit is more difficult to brew than our other mash-extract kits because it requires pre-cooking the specialty adjuncts. Contains 100% organic ingredients: malt extract, malted barley, adjunct grains (wheat, rye, oats, buckwheat, millet, and quinoa), hops, bottling sugar, & Irish Moss. Recipe and instructions included. Produces an original gravity of approximately 1.050. IBU's: 40.

Recommended yeast for this kit: (Not included! Order separately): Wyeast #1056 American Ale, or White Labs California Ale.

Organic Robust Porter: Perhaps one of the most versatile beer styles, because there are so many things you can easily add to make this a unique and memorable brew. Harvest Season can offer some inspirations such as berries or garden herbs. Try organic vanilla beans for a vanilla porter; brew with coffee for a coffee Porter or add chocolate for a Mocha. Also works well with cherries, raspberries, or blackberries! A full bodied, robust ale with a distinct chocolate taste, moderately low hop bitterness, and a full hop aroma. A satisfying brew especially welcome on a crisp autumn day, our porter is milder than a stout, but heartier than a Nut Brown Ale. Contains organic malt extract, organic specialty malts, organic hops, organic bottling sugar, organic Irish Moss, recipe, and instructions. Produces an original gravity of approximately 1.058. IBU's: 33.

Sumatra Mandheling (Fair Trade)

Certified organic, and Fair Trade. Grown in the Highlands of the Aceh province of Sumatra, Indonesia. The Gayo Organic Coffee Farmers Association (PPKGO) is a cooperative with thousands of members who are dedicated to producing high quality certified organic coffee. The Fair Trade price has given the grower members the resources needed to improve the coffee producing infastructure, promote sustainable agriculture and environmental preservation, and provide training in coffee production. The coffee is bold and full bodied balanced with a rich woody, earthy cocoa flavor and roasted caramel sweetness. We like this coffee in a darker roast which tends to mellow the acidity and bring out the underlying sweetness. We recommend a Full City to an espresso roast.

New Hops from New Zealand: 20% Off

New Zealand Nelson Sauvin: 12% Ave. Alpha. This new and unique variety was bred in New Zealand and released in 2000. Named for its aroma which is remarkably similar to the fresh crushed gooseberry aroma of a Sauvignon Blanc grape. Nelson Sauvin has the unique ability to impart a distinctive cool climate white wine “fruitiness”. Offers both a refreshing green grapes flavor, hints of pineapple, with a touch of earthiness to balance the flavor profile. This dual-purpose variety can be used to produce big punchy Ales as well as subtle yet bitter Lagers. The fruitiness may be a little overpowering for the un-initiated, however those with a penchant for bold hop character will find several applications for this true brewer's hop. A must try incredibly unique hop, and there is really no recommended substitute although it shares characteristics with Cascade, Centennial, or Chinook.

New Zealand Rakau: 12% Avg. Alpha. A new and truly unique hop variety from New Zealand. Bursting with a lot of the typical New Zealand fruity character with tropical aroma highlights of passionfruit, mango, and peach. A delicate minerally flavor works surprisingly well in lagers, especially Pilsner. An excellent hop for late hop additions where a prominent hop character is desired in beers such as Pale Ales, ESB, and IPA's. Developed as a dual purpose hop with alpha acids in the 10% range, but delivering "soft" bitterness with low cohumulone levels of less than 25% of alpha levels. Try this in beers calling for Admiral, Amarillo, Simcoe, or Summit.

Crystal 40: Average 40L in color. Adds a light sweet caramel flavor and an amber color. Produced in Vancouver, Washington, so these malts travel less distance to get to our warehouse than any other, lowering both the transport cost and the carbon footprint.

By the pound:

American Wheat: 2-4 oL. This is a clean wheat malt with a less "bready" flavors making it a versatile sub for the very expensive imported Weyermann wheat. Great for all recipes calling for wheat malt. Use up to 60% in an all grain recipe. Produced in Vancouver, Washington, so these malts travel less distance to get to our warehouse than any other, lowering both the transport cost and the carbon footprint.

The Carbonator: $13.50

We already have a great price on this and with our sale save even more, especially if you buy 2 or more. If you like the convenience of these widgets, trust us, you'll want at least 2! Allows you to carbonate a 1 or 2 liter PET soda bottle with the use of a home keg system. To use, just fill your soda bottle with beer, screw on the carbonator cap, attach a Co2 quick disconnect, and pressurize. If you want to make homemade soda water, carbonated fruit juice, or soda at home, there is no easier way to adapt your keg system to this function. A few of these, and you will never want to bottle again!

   

Old Crop Organic Hops: 30%- 50% Off!

All of our pellet hops have been cold stored in nitrogen flushed foil bags, and so the quality is nearly as high as the fresh batch we have just recived. While supplies last!! Whole hops degrade faster, especially the lower alpha hops. New Zealand whole hops retain freshness better because of advanced packaging technology utilized directly upon harvesting.
